肉丸扁豆煮 Meatball with Garlic Sausage Lentil Ginger Stew


  1. 1 leek, diced
  2. 2 carrots, peeled and diced
  3. 2.5cm piece of ginger, finely chopped
  4. 250g Puy lentils
  5. 1.5 litres of vegetable stock
  6. 10 meat balls, around the size of a golf ball 
  7. 200g garlic sausage, diced
  8. 200g cherry tomatoes on the vine
  9. 2 oranges, peeled and sliced.
  10. 25g almond flakes
  11. 200g spinach

  • Heat 2tbsp of olive oil in a cast-iron pot, add the leek and carrot and fry until soft. Stir in the lentils and chopped ginger, mix well, then pour in the veg stock. Cover and bring to boil, then reduce the heat and simmer for a few minutes, add meat balls and diced garlic sausage. 
  • Preheat the oven to 200C, transfer the cast-iron pot to the oven for 30 min. 
  • After 20 minutes, place the tomatoes in a pan, drizzle with olive oil and place it in the oven with the cast-iron pot.
  • Add the orange slices, almond flakes and spinach to the cast iron pot, cook for 5 more min, or until the spinach is cooked. Serve with the roasted tomatoes in bowls.

  • 鑄鐵鍋內加橄欖油,炒大蔥與紅蘿蔔至軟,加入扁豆與薑末,翻炒後加入蔬菜高湯。蓋鍋蓋轉小火悶煮下後加入肉球與大蒜腸。
  • 把扁豆鍋置入 200 度烤箱烤三十分鐘。
  • 扁豆鍋進烤箱二十分鐘後,拿烤盤放番茄淋橄欖油,兩個一起再烤十分鐘。
  • 加柳丁肉,杏仁片與菠菜到扁豆鍋內,再煮五分鐘或煮到菠菜熟。配烤番茄一起吃。

有 food processor 之後誰會想到最麻煩的其實是切柳丁.....
